Abstract

Background : Sanitation hygiene is an effort to control the risk factors for contamination of food, whether from food, people, places, and equipment for safe consumption. The lack of hygiene and sanitation in food management can causes to foodborne illness resulting in indigestion, symptoms of abdominal pain, diarrhea, vomiting, and other complications. Objectives : To know the description of hygiene and sanitation of food in Nutrition Installations in RSUD dr. Doris Sylvanus Palangka Raya. Method : The research used cross-sectional design. The population and samples in this research were 31 people. Results : Sanitation of food service category less (47%), sanitation acceptance of foodstuff sufficient category (75%), sanitation food storage sufficient category (59%), sanitation preparation foodstuff sufficient category (60%), sanitation foodstuff processing sufficient category (64%), sanitation food transport sufficient category (67%), hygiene preparation staff sufficient category (65.25%) 4 people, hygiene processing staff sufficient category (74%) 9 people, hygiene of food service staff sufficient category (65%) 18 people. Conclusion : Sanitation of food service in RSUD dr. Doris Sylvanus Palangkaraya were including less category, hygiene from food operators including good category were 7 people, sufficient category were 20 people, and category less were 4 people.
