Abstract

The low acceptance of the patient's food will have a negative impact on the nutritional status and recovery of the patient, therefore the acceptance of animal side dishes is an important thing to pay attention to as an effort to accelerate the patient's recovery.
In the study of Minimum Service Standards at RSUD dr. Doris Sylvanus for the period January-March 2018 on the regular food menu, leftovers of 24.15%. The research objective was to analyze the acceptability of the dietary modification of additional animal protein on the High Protein High Energi diet (ETPT) at dr. Doris Sylvanus Palangka Raya The method used in this study was Quasy Exsperiment with a pre-post design. Data collection used a taste test form, a sample characteristic form, and a food weighing form. The sample is 150 respondents. The test used is the Independent Sample T-Test, with a significant level of <0.05. And the Annova test was used to see the differences between the five menu groups that were modified with the menu presented by the hospital. The results of the analysis of the difference in taste test which included color, aroma, taste and level of maturity, there were significant differences from menu modifications with the ETPT Diet menu. presented by the Hospital with a sig value <0.05. The result of the acceptance test for the modified menu with the ETPT Diet menu that was presented by the hospital, the sig value <0.05 means that there is a difference in the acceptance of the menu modification with the ETPT Diet menu served by the Hospital.
