Abstract
Perkembangan pola konsumsi pangan pokok masih didominasi oleh kelompok padi-padian terutama beras dan terigu, sedangkan kontribusi umbi-umbian masih rendah. Masyarakat perlu dibimbing untuk berpikir bahwa ada banyak makanan alternatif non beras yang sebagian atau seluruhnya dapat menggantikan fungsi nasi. Hal ini dapat dicapai dengan memperkenalkan, mensosialisasikan dan mengembangkan pengolahan pasca panen pangan karbohidrat non beras yang melibatkan masyarakat.
Penelitian ini adalah penelitian di bidang Gizi Masyarakat, yang bertujuan untuk mengetahui apakah ada pengaruh edukasi melalui Buku Gempita terhadap pengetahuan dan praktik pengolahan pangan lokal non beras pada Kelompok Wanita Tani di Desa Tumbang Tariak. Jenis penelitian ini adalah kuantitatif dengan menggunakan metode Pre-Experimental Design tipe One Group Pretest-Posttest. Analisis data menggunakan uji McNemar dua sampel berpasangan dependent.
Hasil analisis menunjukkan bahwa terjadi peningkatan pengetahuan sebesar 15% dan praktik sebesar 80%. Hasil uji statistik McNemar menunjukkan bahwa ada perbedaan signifikan terhadap pengetahuan dengan nilai p=0.008 (p<0,05) dan ada perbedaan signifikan terhadap perubahan praktik dengan nilai p=0,000 (p<0,05). Kesimpulan hasil penelitian menunjukkan bahwa ada pengaruh pemberian edukasi melalui Buku Gempita terhadap pengetahuan dan praktik pengolahan pangan lokal non beras pada Kelompok Wanita Tani di Desa Tumbang Tariak dengan nilai p value <0,05.
The development of staple food consumption patterns is still dominated by grains especially rice and flour, while the contribution of tubers is still low. The community needs to be guided to think that there are many alternative non-rice foods that can partially or completely replace the function of rice. This can be achieved by introducing, socializing and developing post-harvest processing of non-rice carbohydrate foods that involve the community.
This research is a research in the field of Community Nutrition, which aims to determine whether there is an effect of education through Gempita Books on knowledge and practice of local non-rice food processing in the Women Farmers Group in Tumbang Tariak Village. This type of research is quantitative using the Pre-Experimental Design method of One Group Pretest-Posttest type. Data analysis using McNemar test two samples in dependent pairs.
The results of the analysis show that there is an increase in knowledge by 15% and practice by 80%. The results of McNemar's statistical test showed that there was a significant difference in knowledge with a value of p=0.008 (p<0.05) and there was a significant difference in changes in practice with a value of p=0.000 (p<0.05). The conclusion of the research shows that there is an effect of providing education through Gempita Books on knowledge and practice of local non-rice food processing in the Women Farmers Group in Tumbang Tariak Village with a p value <0.05.
