Abstract

Latar belakang : Rumah Sakit adalah institusi pelayanan kesehatan yang menyelenggarakan pelayanan kesehatan perorangan secara paripurna yang menyediakan pelayanan rawat inap, rawat jalan, dan gawat darurat yang memerlukan pelayanan gizi berupa penyelenggaraan makanan. Penyelenggaraan makanan rumah sakit merupakan rangkaian kegiatan mulai dari perencanaan menu, pengadaan bahan makanan, penerimaan dan penyimpanan bahan makanan, persiapan dan pengolahan makanan, distribusi makanan, penyajian makanan di ruang rawap inap serta, pelayanan makanan pasien. Penyimpanan bahan makanan merupakan cara memelihara keamanan bahan makanan kering dan basah, sehingga dapat mempertahankan kualitas dan kuantitas bahan makanan yang akan diolah. Tujuan : untuk mengetahui gambaran penyimpanan bahan makanan kering di instalasi gizi RSUD dr. Doris Sylvanus Kalimantan Tengah. Metode Penelitian : Penelitian Deskriftif mengenai gambaran penyimpanan bahan makanan kering di Instalasi Gizi RSUD dr. Doris Sylvanus Kalimantan Tengah. Hasil dan Pembahasan : Menunjukkan bahwa kondisi gudang penyimpanan bahan makanan kering di Inslatasi Gizi RSUD Doris Sylvanus tergolong baik 100% menpunyai alat pengukur suhu ruangan berfungsi dan sesuai dengan suhu yang dianjurkan yang mengusahakan sistem FIFO (First In First Out). Instalasi Gizi RSUD dr Doris Sylvanus Kalimantan Tengah tergolong baik, menpunyai rak yang tersedia di gudang bahan makanan kering memiliki jarak sehingga tidak bersentuhan langsung dengan lantai langitlangit ruangan. Kesimpulan :Di Instalasi Gizi RSUD dr Doris Sylvanus memiliki 2 ahli gizi yang bertugas sebagai penanggung jawab bahan makanan kering dengan kondisi gudang penyimpanan bahan makanan kering yang tergolong baik dan telah sesuai dengan standar Pedoman Gizi Rumah Sakit (PGRS). Begitu juga dengan prosedur penyimpanan bahan makanan kering yang tergolong baik telah sesuai dengan standar Pedoman Gizi Rumah Sakit (PGRS). Background: A hospital is a healthcare institution that provides comprehensive individual health services, including inpatient, outpatient, and emergency care, all of which require nutritional services in the form of food administration. Hospital food administration is a series of activities starting from menu planning, procurement of food ingredients, receipt and storage of food ingredients, preparation and processing of food, food distribution, food presentation in inpatient rooms, and patient food services. Food storage is a method of maintaining the safety of both dry and wet food ingredients to preserve the quality and quantity of the ingredients to be processed. Objective: To determine the description of dry food storage in the Nutrition Installation of RSUD dr. Doris Sylvanus, Central Kalimantan. Research Method: A descriptive study regarding the description of dry food storage in the Nutrition Installation of RSUD dr. Doris Sylvanus, Central Kalimantan. Results and Discussion: The results show that the condition of the dry food storage warehouse in the Nutrition Installation of RSUD Doris Sylvanus is categorized as good, with 100% having functioning room temperature measurement tools consistent with the recommended temperature and implementing the FIFO (First In First Out) system. The Nutrition Installation of RSUD dr. Doris Sylvanus, Central Kalimantan, is categorized as good; the shelves available in the dry food warehouse have sufficient spacing so they do not come into direct contact with the floor or the ceiling of the room. Conclusion: The Nutrition Installation of RSUD dr. Doris Sylvanus has 2 nutritionists serving as persons in charge of dry food ingredients, with dry food storage warehouse conditions categorized as good and in accordance with the Hospital Nutrition Guidelines (PGRS) standards. Likewise, the dry food storage procedures are categorized as good and comply with the Hospital Nutrition Guidelines (PGRS) standards.
