Abstract
Latar Belakang : salah satu masalah yang terjadi pada penyelenggaraan makanan adalah adanya sisa makanan. Sisa makanan yang tinggi berdampak menandakan penyelenggaraan makanan kurang berhasil. Beberapa penelitian menunjukkan bahwa menu sayur merupakan menu yang paling banyak tersisa. Kurang nya konsumsi sayur dapat menyebabkan penyakit degenerative seperti obesitas, diabetes, hipertensi, tekanan darah tinggi, dan kanker. Selain itu, kurangnya konsumsi sayur dapat mengakibatkan berbagai dampak yaitu menurunnya imunitas/kekebalan tubuh seperti muda terkena flu, mudah mengalami stress atau depresi, gangguan pencernaan seperti sembelit, gusi berdarah, sariawan, gangguan mata, kulit keriput, arthritis, osteoporosis, jerawat, dan kelebian kolestrol darah. Tujuan : Tujuan penelitian ini adalah untuk Mengetahui Gambaran Daya Terima Makan Siang Sayuran dan Tingkat Kesukaan siswa di SMP Islam Darussalam Palangka Raya. Metode penelitian : penelitian ini dilaksanakan pada tanggal 23 April – 25 April 2024 alat pengumpulan data form Comstock, kuesioner uji kesukaan, dan lembar persetujuan sampel. Hasil dan Pembahasan : Rata – rata daya terima siswa kelas VII pada menu sayur diukur menggunakan Comstock didapatkan hasil jika dalam kategori habis sebanyak 43,7% dari sampel. Jika daya terima makanan rendah dalam waktu yang lama akan mneyebabkan tidak terenuhinya zat gizi yang dibutuhkan. Rata – rata tingkat kesukaan siswa kelas VII pada menu sayur diukur menggunakan form uji kesukaan didapatkan hasil 46,07% untuk kategori “suka”. Hal ini disebabkan masih banyak nya siswa yang memilih sayur yang dikonsumsi dan tidak memakan sayur. Kesimpulan : tingkat kesukaan selama penelitian adalah 46,07%, dan daya terima 43,7%. Kurangnya tingkat kesukaan dan daya terima sayur pada siswa dapat diperbaiki dengan menu yang lebih bervariasi dengan membuat siklus menu dan cara pengolahan yang baik.
Background : One of the problems that occurs in food organization is the presence of food waste. High food waste has the effect of indicating that food organization is less successful. Some studies show that vegetable menus are the most leftover menus. Lack of vegetable consumption can lead to degenerative diseases such as obesity, diabetes, hypertension, high blood pressure, and cancer. In addition, the lack of vegetable consumption can lead to various impacts such as decreased immunity such as young flu, easy to experience stress or depression, digestive disorders such as constipation, bleeding gums, mouth ulcers, eye disorders, wrinkled skin, arthritis, osteoporosis, acne, and excess blood cholesterol. Objective : The purpose of this study was to determine the description of the acceptability of lunch vegetables and the level of liking of students at SMP Islam Darussalam Palangka Raya. Research methods : This research was conducted on April 23 - April 25, 2024 data collection tools Comstock form, favorability test questionnaire, and sample approval sheet. Results and discussion : The average acceptability of seventh grade students on the vegetable menu measured using Comstock obtained results if in the exhausted category as much as 43.7% of the sample. If the acceptance of food is low for a long time, it will not fulfill the nutrients needed. The average level of favorability of seventh grade students on the vegetable menu measured using the favorability test form obtained a result of 46.07% for the "like" category. This is because there are still many students who choose vegetables that are consumed and do not eat vegetables. Conclusions : The level of liking during the study was 46.07%, and the acceptability was 43.7%. The lack of favorability and acceptability of vegetables in students can be improved with a more varied menu by making a menu cycle and good processing methods
