Abstract

Latar Belakang : Data rekam medik RSUD dr. Doris Sylvanus Kalimantan Tengah pada tahun 2022 didapatkan jumlah kasus DM kunjungan rawat inap adalah 969 kasus. Upaya untuk memperoleh kesembuhan dari suatu penyakit, termasuk penyakit DM tipe 2 dengan komplikasi selain pengobatan, makanan merupakan salah satu faktor penunjang. Snack DM RSUD dr. Doris Sylvanus adalah pisang. Makanan dengan berbahan tepung ubi jalar ungu dapat berpotensi sebagai alternatif bahan makanan bagi penderita Diabetes Melitus. Modifikasi dan standarisasi menu adalah mengubah resep dasar menjadi resep baru untuk meningkatkan nilai gizi suatu makanan dan dibakukan agar kualitas dan konsistensinya sama setiap waktunya.

Tujuan : Mengetahui gambaran daya terima panelis terhadap modifikasi snack puding ubi ungu pisang Diabetes Melitus di Instalasi Gizi RSUD dr. Doris Sylvanus.

Metode Penelitian : Penelitian ini dilaksanakan tanggal 24 Mei 2022 menggunakan form uji kesukaan dengan jenis penelitian deskriptif.

Hasil dan Pembahasan : Hasil uji kesukaan snack sore DM setelah dimodifikasi menjadi puding ubi ungu pisang didapatkan hasil yaitu aroma 76,19% panelis suka, warna 57,14% panelis sangat suka, tekstur 71,43% panelis suka, dan rasa 76,19% panelis suka.

Kesimpulan : Pada penelitian ini, dapat diketahui biaya untuk membuat puding ubi ungu pisang yaitu sebesar Rp2.974,55,-/porsi.

Background : Medical record data at RSUD dr. Doris Sylvanus Kalimantan Tengah in 2022 found the number of DM cases in inpatient visits was 969 cases. Efforts to obtain healing from a disease, including type 2 DM with complications other than treatment, food is one of the supporting factors. Snack DM RSUD dr. Doris Sylvanus is a banana. Foods made from purple sweet potato flour can potentially be an alternative food for people with diabetes mellitus. Modification and standardization of the menu is changing the basic recipe into a new recipe to increase the nutritional value of a food and standardized it so that the quality and consistency are the same every time.

Objective : To describe the panelists' acceptance of the modification of the purple sweet potato pudding and banana diabetes snack at the Nutrition Installation of RSUD dr. Doris Sylvanus.

Research method : This research was conducted on May 24, 2022 using a preference test form with a descriptive type of research.

Results and Discussion : The results of the DM afternoon snack preference test after being modified into purple-banana sweet potato pudding showed that the aroma was 76.19% of the panelists liked, the color was 57.14% the panelists really liked, the texture was 71.43% the panelists liked, and the taste was 76.19 % panelists like.

Conclusion : In this study, it can be seen that the cost to make banana purple sweet potato pudding is Rp.2,974.55,-/portion.
