Abstract

Latar Belakang : Penyakit tidak menular yang mengalami peningkatan dari tahun ke tahun salah satunya adalah Diabetes Melitus Tipe 2. Tingginya biaya pengobatan Diabetes Melitus secara medis membuat masyarakat banyak mencari cara pengobatan secara non medis seperti menggunakan obat tradisional dari tumbuhan pare. Manfaat pare sebagai antidiabetes. Untuk mengurangi rasa pahit pada pare ditambahkan dengan mentimun dan fruktosa.

Tujuan : Mengetahui Pengaruh Konsentrasi Fruktosa Terhadap Kadar Glukosa Darah, Mutu Organoleptik dan Daya Terima pada Formula Jus ChaLek (Charantin dan Lektin).

Metode Penelitian : Rancangan penelitian produk adalah Rancangan Acak Lengkap (RAL) dengan 4 perlakuan terdiri dari perbedaan konsentrasi fruktosa P_1 = 2% Fruktosa ; P_2 = 3% Fruktosa ; P_3 = 4% Fruktosa ; P_4= 5% Fruktosa. Sedangkan rancangan penelitian intervensi menggunakan Pre-Post Test Control Group Design. Analisis dan Pengolahan Data Hasil Uji Organoleptik dan Daya Terima Dideskripsikan dan ditabulasi serta untuk Hasil Uji Kadar Glukosa Darah ditabulasi, dirata – rata, dideskripsikan dan diuji menggunakan Uji T Berpasangan untuk kelompok eksperimen sedangkan kelompok kontrol menggunakan design Uji T Independent.

Hasil dan Pembahasan : Formula Jus ChaLek memiliki efektifitas terhadap penurunan kadar glukosa darah dibuktikan dengan kadar glukosa darah setelah perlakuan eksperimen lebih rendah dibandingkan perlakuan kontrol. Hasil uji organoleptik sebagian besar panelis menilai berwarna hijau, aroma khas pare, rasa manis, dan penampakan jernih. Hasil uji kesukaan tidak ada perbedaan yang signifikan. Tetapi pada rasa ada perbedaan yang signifikan. Dan formula yang disukai dengan konsentrasi 5%.

Kesimpulan : Ada pengaruh penurunan Kadar glukosa darah responden sebelum dan setelah diberikan intervensi.

Background : Non-communicable diseases that have increased from years, one of which is Type 2 Diabetes Mellitus. The high cost of medical Diabetes Mellitus treatment makes many people look for non-medical treatment methods such as using traditional medicines from bitter melon plants. Benefits of bitter melon as antidiabetic. To reduce bitter taste of bitter gourd, cucumber and fructose are added.

Objective : To determine effect of Fructose Concentration on Blood Glucose Levels, Organoleptic Quality and Acceptance of ChaLek Juice Formula (Charantin and Lectin).

Methods : The product research design was completely randomized design (CRD) with 4 treatments consisting of different concentrations of fructose P1 = 2% fructose; P2 = 3% Fructose; P3 = 4% Fructose; P45% Fructose. Meanwhile, intervention research design used Pre-Post Test Control Group Design. Analysis and Processing Organoleptic Test Results and Acceptability Data were described and tabulated and for Blood Glucose Level Test Results tabulated, averaged, described and tested using Paired T Test for the experimental group while control group used Independent T Test design.

Results and Discussion : The ChaLek Juice Formula was effective in reducing blood glucose levels, as evidenced by lower blood glucose levels after experimental treatment than control treatment. The results of organoleptic test, most panelists assessed it was green, characteristic bitter taste, sweet taste, and clear appearance. The results of preference test have no significant difference. But in taste significant difference. And preferred formula with concentration of 5%.

Conclusion : There is effect decreasing respondent's blood glucose level before and after intervention.
