Abstract

Pelayanan gizi yang optimal diperlukan adanya standar kebutuhan tenaga gizi berupa jenis dan jumlah tenaga gizi. Selain itu, dibutuhkan juga tenaga pendukung lain salah satunya tenaga persiapan pada Penyelenggaraan Makanan (PM) Instalasi Gizi Rumah Sakit. Metode Workload Indicator Staff Need (WISN) adalah suatu metode perhitungan kebutuhan tenaga kesehatan berdasarkan beban kerja nyata yang dilaksanakan oleh setiap kategori sumber daya manusia kesehatan pada tiap unit kerja di fasilitas pelayanan kesehatan termasuk Rumah Sakit.

Penelitian ini bertujuan untuk mengetahui analisis beban kerja tenaga persiapan PM Instalasi Gizi dengan metode WISN di RSUD dr. Doris Sylvanus.

Metode penelitian ini merupakan penelitian deskriptif dengan analisis data kuantitatif, pendekatan cross sectional, serta pengumpulan data dengan metode work sampling, telaah dokumen dan wawancara.

Sampel penelitian ini adalah tenaga persiapan berjumlah 5 orang. Pengamatan dilakukan kepada aktivitas tenaga persiapan setiap 5 menit selama 10 hari (siklus menu I s/d X) selama 6 jam 25 menit.

Hasil penelitian menunjukkan bahwa waktu kegiatan langsung 48,7%, waktu kegiatan tidak langsung 9,8%, waktu kegiatan non produktif 37,8% dan waktu kegiatan pribadi 3,6%. Waktu kerja tersedia sebanyak 106.500 menit dalam 1 tahun, beban kerja terbanyak pada siklus menu ke 3 sebesar 1010 menit/hari, dan beban kerja terendah pada siklus menu IX sebesar 465 menit/hari. Standar kelonggaran tenaga persiapan yaitu 0,340. Sehingga didapatkan jumlah optimal kebutuhan tenaga persiapan berdasarkan metode WISN adalah sebanyak 3 orang. Saat ini jumlah tenaga persiapan yang ada di Instalasi Gizi RSUD dr, Doris Sylvanus berjumlah 5 orang. Hal ini berarti terdapat kelebihan tenaga persiapan sebanyak 2 orang.

Optimal nutrition services require the standard of nutritional needs in the form of the type and number of nutrition workers. In addition, other supporting staffs are also needed, one of them is preparation staff at the Hospital Nutrition Installation Food Administration. The Workload Indicator Staff Need (WISN) method is a method of calculating the needs for health workers based on the real workload carried out by each category of health human resources in each work unit in health care facilities including hospitals.

This study aimed to determine the workload analysis of food preparation personnel at the Nutrition Installation using the WISN method at RSUD dr. Doris Sylvanus.

This research method was a descriptive research with quantitative data analysis with a cross sectional approach and data collection by work sampling method, document review and interviews.

The sample in this study was the preparatory staffs totaling 5 people. Observations were made on the activities of the preparatory staffs every 5 minutes for 10 days (menu cycle I to X) for 6 hours 25 minutes.

The results showed that the time for direct activities was 48.7%, the time for indirect activities was 9.8%, the time for non-productive activities was 37.8% and the time for personal activities was 3.6%. Available working time was 106,500 minutes in 1 year, the highest workload in the 3rd menu cycle was 1010 minutes/day, and the lowest workload was on the IX menu cycle of 465 minutes/day. Standard slack for preparatory personnel was 0.340. So that the optimal number of preparation staffs needs based on the WISN method was 3 people. Currently, the number of preparatory staffs in the Nutrition Installation of RSUD dr, Doris Sylvanus are 5 people. This means that there is an excess of 2 preparatory personnels.
