Abstract

Background :Foodstuff storage is a way of organizing, storing, maintaining food safety, both quality and quantity in food storage warehouses. The processing/cooking process in institutions is different from cooking small portions. In an institutional food delivery system, where ingredients are prepared in large portions. Therefore, in order to maintain the quality of the taste of the dish, different stages are needed when cooking in small quantities. Purpose: the general objective of this research is to find out the “Description of Storage and Processing of Food Materials in the Class IIA Detention Center in Palangka Raya City”. Research Method: The research method is descriptive. Results and Discussion: The age characteristics of food storage and processing workers ranged from 23-39 years, the educational characteristics of junior high and high schools, the sex characteristics of all males and the duration of work ranged from 1-14 months. The requirements for storage and processing of food ingredients are in the sufficient category (60%) and (66%), the standard for food storage and processing facilities is in the sufficient category (63%) and (77.27%), the requirements for the food processing room are in the sufficient category (73.33%) and the rules for the stages of food processing are in the good category (83.33%). Conclusion: The storage and processing of food ingredients in the Class IIA Detention Center in Palangka Raya City is adequate and has reached the standards set.
