Abstract
Latar belakang : Proses penerimaan bahan makanan merupakan salah satu hal pokok yang harus dipersiapkan dan dikontrol dengan baik dalam industri boga. Teknik pencatatan dalam proses penerimaan sangat diperlukan untuk ketertiban pengelolaan dan memudahkan pengontrolan pemasukan serta pengeluaran bahan dan alat. Banyak kegiatan administrasi dan mencatat yang perlu dilakukan, misalnya laporan penerimaan barang, kondisi bahan makanan, pendistribusian. Tujuan : Tujuan umum penelitian ini adalah untuk mengetahui gambaran penerimaan bahan makanan di rumah Tahanan Negara kelas IIA Kota Palangka Raya. Metode Penelitian : Penelitian ini menggunakan metode cross sectional. Data penerimaan bahan makanan basah dilakukan secara observasi menggunakan kuesioner dan alat bantu ceklis. Hasil dan Pembahasan : Penerimaan bahan makanan di Rumah Tahanan Negara Kelas IIA Kota Palangka Raya yaitu setelah bahan dipesan pada saat penerimaan dilakukan pengecekan terhadap bahan makanan apakah sudah sesuai jumlah, dan spesifikasi yang telah di tetapkan, setalah bahan makanan di timbang maupun diperiksa lalu petugas yang bertugas untuk penerimaan bahan makanan akan segara mencatat di lembar ceklis kesesuaian bahan makanan tujuannya untuk sebagai bukti bahwa telah dilalukan penerimaan bahan makanan lalu selanjutnya bahan makanan dikirim kegudang tempat penyimpanan. Kesimpulan : Sistem penerimaan bahan makanan basah di Rumah Tahanan Negara Kelas IIA Kota Palangka Raya memiliki presentase 83% untuk kepatuhan dalam ruang penerimaan bahan makanan.
Background : the food ingredients’ receiving process is one of the main aspects that have to be properly prepared and managed in the hospitality industry. The recording techniques in receiving process are indispensable to properly manage and facilitate the management of incoming and outgoing materials and tools. There are many administrative and recording activities needed to be carried out such as reports of ingredients receiving, condition of food ingredients, and distribution. Objective : The general objective of this study is to describe the food ingredients receiving at the Class IIA State Detention Center in Palangka Raya City. Research method: the data collection referring to a cross-sectional approach. Data of the wet food ingredients acceptance is conducted by observation using a questionnaire and checklist tool. Findings and discussion: the receiving of food ingredients at the Class IIA State Detention Center in Palangka Raya City is after the ingredients ordered. While the receiving process, the food ingredients are checked to identify if they are suitable with the set of quantity and standards, after weighing or examining the food ingredients, the food receiving officer would directly record the suitability of food ingredients on the checklist to approve that the food ingredients has been received and then the food ingredients are sent to the warehouse where they are stored. Conclusion: The system of receiving wet food ingredients at the Class IIA State Detention Center in Palangka Raya City has 83% percentage for compliance at the food receiving room.
