Abstract

Latar belakang : Diet yang tepat tentunya harus sesuai diagnosis gizi yang telah ditetapkan yang kemudian diaplikasikan ke dalam suatu intervensi menu diet. Berdasarkan hasil Riskesdas tahun 2018 menunjukkan adanya peningkatan kejadian diabetes pada penduduk umur ≥15 tahun menjadi 2%. Karbohidrat akan dicerna dan diserap dalam bentuk monosakarida, terutama gula. Penyerapan gula menyebabkan peningkatan kadar gula darah dan mendorong peningkatan sekresi hormon insulin untuk mengontrol kadar gula darah.

Tujuan : Tujuan umum penelitian ini adalah untuk mengetahui kesesuaian besar porsi makanan pokok diet Diabetes Melitus yang disajikan dengan standar porsi RSUD dr. Doris Sylvanus Palangka Raya.

Metode penelitian : Penelitian ini dilaksanakan selama 3 hari pada April 2022 alat pengumpulan data dengan pendekatan cross sectional. Data besar porsi makan pokok diperoleh dari hasil penimbangan menggunakan alat timbangan makanan.

Hasil dan pembahasan : Besar porsi makanan pokok (bubur biasa, nasi lunak dan nasi biasa) diet DM yang disajikan waktu makan pagi, siang dan malam rata-rata tidak sesuai dengan standar porsi diet DM RSUD dr. Doris Sylvanus. Ketidaksesuaian besar porsi makanan pokok diet DM disebabkan karena faktor tenaga pemorsi makanan pokok itu sendiri dan alat yang digunakan untuk memorsikan makanan pokok.

Kesimpulan : Kesesuaian besar porsi makanan pokok diet DM 1500, 1700, dan 1900 yang disajikan selama 3 hari rata-rata tidak sesuai dengan standar porsi diet DM RSUD dr. Doris Sylvanus.

Background : The right diet must of course be in accordance with the nutritional diagnosis that has been determined which is then applied to a diet menu intervention. Based on the results of Riskesdas in 2018, it showed an increase in the incidence of diabetes in the population aged 15 years to 2%. Carbohydrates will be digested and absorbed in the form of monosaccharides, especially sugars. Absorption of sugar causes an increase in blood sugar levels and encourages increased secretion of the hormone insulin to control blood sugar levels.

Objective : The general objective of this study was to determine the suitability of large portions of the staple food of the Diabetes Mellitus diet served with the standard portion of RSUD dr. Doris Sylvanus Palangka Raya.

Research methods : This research was conducted for 3 days in April 2022 data collection tool with a cross sectional approach. Large data on the portion of staple food obtained from the results of weighing using a food scale.

Results and discussion : The large portion of staple foods (regular porridge, soft rice and plain rice) on the DM diet served at breakfast, lunch and dinner on average did not match the standard portion of the DM diet at RSUD dr. Doris Sylvanus. The large discrepancy in the portion of the staple food portion of the DM diet is caused by the power factor for the portioning of the staple food itself and the tools used to portion the staple food.

Conclusions : The large proportion of dietary staple food portions of DM 1500, 1700, and 1900 which were served for 3 days on average were not in accordance with the standard portion of the DM diet at RSUD dr. Doris Sylvanus.
