Abstract

Latar Belakang: Penyakit jantung koroner (PJK) merupakan penyebab kematian utama secara global. Pola makan modern yang tinggi konsumsi makanan cepat saji dan UPF diduga menjadi faktor yang berkontribusi terhadap peningkatan risiko PJK melalui mekanisme peningkatan obesitas, dislipidemia, hipertensi, inflamasi sistemik, dan disfungsi metabolik. Tujuan: Mengetahui hubungan antara konsumsi makanan cepat saji dan UPF dengan faktor risiko PJK berdasarkan hasil sintesis literatur dan penelitian terdahulu. Metode: Penelitian dilakukan dengan pendekatan kajian pustaka terstruktur (literature review) terhadap 20 artikel ilmiah, yang terdiri dari 16 jurnal internasional dan 4 jurnal nasional. Penelitian internasional meliputi desain kohort, kasus–kontrol, meta-analisis, cross-sectional, dan Mendelian Randomization. Literatur Review Indonesia mencakup desain observasional dan kajian pustaka. Kualitas studi dievaluasi menggunakan Joanna Briggs Institute Critical Appraisal Tools (JBI). Hasil: Hasil penelitian menunjukkan bahwa konsumsi makanan cepat saji dan Ultra-Processed Foods secara konsisten berhubungan dengan peningkatan risiko obesitas, hipertensi, diabetes melitus, dislipidemia, serta kejadian dan progresivitas penyakit jantung koroner. Kesimpulan: Secara keseluruhan, sintesis dari berbagai penelitian menunjukkan bahwa konsumsi fast food dan UPF merupakan faktor yang berperan penting dalam peningkatan risiko obesitas, hipertensi, diabetes melitus, dislipidemia, serta kejadian PJK. Pola konsumsi ini memberikan dampak negatif yang signifikan terhadap kesehatan kardiovaskular, sehingga pencegahan melalui edukasi gizi dan modifikasi pola makan menjadi sangat penting. Background: Coronary heart disease (CHD) is the leading cause of death globally. A modern diet that is high in fast food consumption and UPF is thought to be a contributing factor to the increased risk of CHD through mechanisms of increased obesity, dyslipidemia, hypertension, systemic inflammation, and metabolic dysfunction. Objective: To determine the relationship between fast food consumption and UPF and CHD risk factors based on the results of literature synthesis and previous research. Methods: The research was conducted with a structured literature review approach to 20 scientific articles, consisting of 16 international journals and 4 national journals. International research includes cohort design, case-control, metaanalysis, cross-sectional, RCTs, and Mendelian Randomization. Indonesian research includes observational design and literature review. The quality of the study was evaluated using the Joanna Briggs Institute Critical Appraisal Tools (JBI). Results: The results showed that the consumption of fast food and Ultra-Processed Foods was consistently associated with an increased risk of obesity, hypertension, diabetes mellitus, dyslipidemia, as well as the incidence and progression of coronary heart disease. Conclusion: Overall, a synthesis of various studies shows that fast food consumption and UPF are factors that play an important role in increasing the risk of obesity, hypertension, diabetes mellitus, dyslipidemia, and the incidence of CHD. This consumption pattern has a significant negative impact on cardiovascular health, so prevention through nutrition education and dietary modification is very important.
