Abstract

Anak balita merupakan golongan masyarakat yang rentan gizi, yaitu yang
paling mudah menderita kelainan gizi. Pengaturan makanan yang seimbang
menjamin terpenuhinya kebutuhan gizi anak. Makanan sepinggan (one dish meal)
merupakan hidangan dimana seluruh lauk terdapat dalam “satu piring”. Walaupun
begitu, kebutuhan akan karbohidrat, protein dan sayur akan terpenuhi.
Penggunaan standar resep pada proses produksi makanan membantu terciptanya
kualitas dan konsistensi dari makanan yang diproduksi. Penelitian ini bertujuan
untuk menganalisis standarisasi resep modifikasi menu one dish meal untuk
balita, mengetahui biaya satuan (unit cost), serta menganalisis hasil uji cita rasa.
Penelitian ini dilaksanakan tanggal 10 dan 11 Mei 2020. Jenis penelitian adalah
penelitian kuantitatif. Sumber data diperoleh dari internet, dan dari 3 orang
panelis. Setelah 3 kali percobaan, ditemukan standar resep sup makaroni sayur
dengan hasil uji cita rasa: aroma harum, warna menarik, rasa enak dan gurih,
tekstur kenyal, porsi sesuai, dan bentuk menarik. Hasil uji cita rasa sushi cantik:
aroma harum, warna menarik, rasa enak, gurih, dan tidak terlalu asam. Tekstur
sesuai, tidak lembek dan tidak basah, porsi sesuai, serta bentuk rapi dan menarik.
Pada penelitian ini, dapat diketahui biaya untuk membuat sup makaroni sayur
yaitu sebesar Rp 17.037,-/porsi, sedangkan sushi cantik yaitu sebesar Rp 16.522,-
/porsi.

Toddlers are a group of people who are vulnerable to nutrition, which is the
easiest to suffer from disorders of nutrition. Setting well-balanced meals ensure
the fulfillment of the nutritional needs of children. The one-dish meal is a dish
where the whole side is contained in the “o
ne plate”. Even so, the need for carbohydrates, protein, and vegetables will
be fulfilled. The use of standard recipes on the food production process helps the
creation of the quality and consistency of the food produced. This study aims to
analyze the standardization of recipe modification menu one-dish meal for a
toddler, knowing unit costs, as well as analyze the results of the taste test. This
study was conducted on 10 and 11 May 2020. This type of research is quantitative
research. Data source obtained from the internet, and the 3 panelists. After 3
attempts, found a standard recipe sup makaroni sayur with the results of the taste
test: fragrant aroma, attractive color, good taste, and savory, chewy texture,
portion appropriate, and interesting shapes. The results of the taste test of sushi
cantik: fragrant aroma, attractive colors, taste delicious, savory, and not too sour.
The texture of the suit, not mushy and not wet, the portion of the suit, as well as
the form of neat and interesting. In this study, it can be seen the cost to make sup
makaroni sayur amounting to Rp 17.037,-/portion, while the sushi cantik Rp 16.522,-/portion.
